Recently I was wondering what to cook for dinner – something that wouldn’t take too long and would be fairly light.  I had just been grocery shopping and happened to get some canned (wild) salmon and thought I’d combine my love of fish and cakes!

Here are the ingredients:

  • 2 cans fish, or 400g (ish) of non-canned fish, chunked
    • I used 1 can salmon, 1 can tuna
  • Boiled potatoes – mashed
    • I used 1 sweet potato, 2 carrots and some broccoli stalks
  • 1/2 onion – chopped
  • 1 clove garlic – minced
  • 2 cups bread crumbs – we used homemade GF ones
    • We keep crusts from gluten free bread,  blend them, and freeze them
  • 2 eggs
  • 2 tbsp chopped cilantro
  • Juice from 1/2 a lime
  • Salt
  • Pepper
  • Cooking oil – I used avocado oil

Procedure:

  1. Dice and boil your potatoes (or other starchy veg) until soft ~15 minutes
  2. Strain and mash potatoes
  3. Fry onion in a pan until just soft ~5 minutes
  4. Add garlic to pan just as onion is softening – remove from heat when you can smell the garlic cooking ~ 1 minute
  5. Combine all ingredients in a big bowl, except for the cooking oil
  6. Make snowball size patties with your hands, squish them, fry them in a little oil until golden brown on either side
  7. Eat them
